Well with the new year and us all trying to get back on track I’ve decided to share my favorite green refresh smoothie that I make all the time. Its a good way to sneak in some greens but still tastes good. I know it works because my kids love it! They start cheering every time I make smoothies. Which makes me feel like I secretly won a prize because they are excited about eating something healthy haha! The secret to balancing out the kale is to use other bright and fresh ingredients. The combination of the pineapple, mint and lime still keep it a refreshing flavor. Check out my Must Have Kitchen Tools for the best citrus press for limes and lemons.
Now making a green refresh smoothie has always been something I’ve made with what I have at home. You can add and sub in other things to taste. I will admit that the kale can make it thick and if you don’t want that you can swap it out for spinach or a combination of the two. If you have a powerful blender it should get pretty smooth. My ninja blender and even the bullet always do the trick.
Green Refresh Smoothie
- 2 large kale leaves – leaves torn off the stem
- 1/2 cucumber chopped
- 1 to 1 1/2 cups of chopped pineapple
- 1/2 lime juiced
- 3-4 mint leaves
- 1/2 cup coconut water, water or whatever juice you may want.
Add all ingredients to blender and blend until fully combined and smooth. Add more liquid as needed for consistency. Thats its! Enjoy!
